Coratina is a typical cultivar of the Apulian countryside, its origin is very ancient, prior to 1700. Its name is linked to the city of Corato, a locality in the Bari area, an area where it is particularly widespread.
Organoleptic notes: S.captures strong scents of fresh grass and its scent evokes the artichoke. Very rich in polyphenols, it has an intense, broad, full-bodied and decisive flavor, characterized by marked spicy tones and persistent bitter nuances.
In the kitchen: THEideal in many preparations especially as a raw condiment on red meats, soups, legumes and fish, or simply on bread to appreciate all its sensory characteristics.
